Cucumber Cups with California Crab

This is another wonderful filling to use with the refreshing Cucumber Cups.  I LOVE all things sushi and thought how amazing would it be to recreate the California roll into this appetizer, minus the rice.  Indulge!




INGREDIENTS

2 cucumbers, peeled and cut into ¾ inch slices~ carefully scoop out center of each slice, leaving the bottom intact
8 oz. imitation krab, flaked (you could also use the real deal)
½ cup Mayo
1 teaspoon chipotle puree
1 avocado, diced small
Salt and pepper, to taste
Green onions, chopped for garnish


DIRECTIONS

Combine krab, mayo, chipotle and avocado and season with salt and pepper.  More or less chipotle can be used depending on the desired heat.  Pipe mixture into cucumber cups and garnish with green onions.
