Smoked Turkey Crepes

This is my attempted to recreate a fabulous dish I had in a little cafe in Dallas called Cafe Brazil.  I love everything about this dish.  It's light, fresh and amazingly delicious.





Ingredients

1 tbsp olive oil
½ cup chopped onion
½ cup chopped red bell pepper
½ cup mushrooms sliced
½ cup corn
1 cup chopped smoked turkey
Feta cheese
Salt and White pepper to taste
Avocado, cilantro and green onion for garnish
Spicy cream sauce (recipe follows)
Store bought crepes (one of these days I will make my own)

Directions
Place oil in a pan and sauté onion, mushrooms and red bell pepper until slightly softened.  Add corn and smoked turkey let cook for a couple of minutes.  Season with salt.  Warm crepes and apply smoked turkey mixture in the middle of crepe and sprinkle with a little feta cheese.  Roll crepe and add another ¼ cup or so of the mixture on top of the crepe.  Drizzle with spicy cream sauce and garnish with more feta, cilantro, green onion and avocado.


Spicy Cream Sauce

4 tbsp butter
¼ cup flour
2 cups milk
1 tbsp chipotle sauce
Salt and white pepper

In a sauce pan melt butter over medium heat.  Add flour and whisk until smooth, about 2 minutes.  Always stirring, gradually add the milk and chipotle sauce, continue to whisk until the sauce is smooth and creamy. Simmer until it is thick enough to coat the back of a spoon.  Remove from heat and set aside.  I like to put it in a squeeze bottle for drizzling over the crepe.
